Vegan oatmeal chocolate chip cookies
Such a classic favorite that could absolutely be confused for a breakfast cookie… just saying.
INGREDIENTS
½ cup (1 stick) vegan earth balance butter, room temp
½ cup brown sugar, packed
½ cup granulated sugar
1 ½ cup all purpose flour
1 ½ cup old fashioned oats
1 teaspoon baking powder
1 teaspoon baking soda
1/3 cup unsweetened almond milk
1/2-2/3 cup dark chocolate chips
INSTRUCTIONS
Preheat oven to 350.
In a stand mixer, combine room temperature butter and sugars, cream on medium speed.
In a separate bowl, whisk together oats and dry ingredients. Slowly add to the stand mixer and combine on medium speed.
Fold chocolate chips in. Using a cookie scooper or large soup spoon, create 2 inch balls and place an inch apart on a lined cookie sheet. Bake for 16 minutes, until bottoms are golden. Do not over bake.
Allow to cool before enjoying. Makes 16 cookies.
