Vegan banana nut celery bread

This banana nut bread recipe may be my favorite one so far. I have a chocolate banana bread recipe but this is absolutely perfect! If you don’t juice celery, you can replace the one cup of celery pulp with two more mashed bananas.

Ingredients

2 ripe bananas, mashed

1 cup celery pulp, blended to break down large pieces

1 cup packed brown sugar (use monkfruit brown sugar for a healthier option)

1/2 cup pure maple syrup (use monkfruit syrup for a healthier option)

1 teaspoon vanilla extract

1/2 cup coconut oil, room temperature

2 tablespoons ground flax seed (you can use chia seed)

1 2/3 cups unbleached organic all-purpose flour (use cassava flour for a gluten-free option)

1/2 teaspoon baking soda

1/4 teaspoon pink salt

1/2 tablespoon ground cinnamon

1/2 cup walnuts + 1/4 cup for topping (optional)

Instructions

Preheat oven to 325.

Mash two bananas and add blended celery pulp, stir to combine.

Add in brown sugar, maple syrup, vanilla extract and coconut oil, mix well.

Stir in ground flax seed, allow to sit for two minutes.

Add flour, baking soda, cinnamon and salt, fold together.

Fold in 1/2 cup walnuts; I used whole walnuts for the batter.

Spread batter into a parchment lined 9x9 pan or loaf pan. Top with remaining chopped walnuts.

Bake for 50-55 minutes, or until a toothpick comes out clean from the center.

Allow to completely cool before slicing.
