Vegan grain-FREE & nut-free brownies
Grain-free and nut-free brownies that don’t require any refined sugar. Naturally sweetened with banana and pure maple syrup. The perfect thick and chewy texture with a rich taste. Healthy alternative to its traditional counterpart.
Ingredients
3 ripe bananas, mashed
2 flax eggs (2T ground flax + 5T water)
1 cup cassava flour
2T cacao powder
1/4 cup pure maple syrup (you can use monk fruit syrup instead for a low sugar option)
1/4 cup water
1 tsp baking soda
1/2 cup Enjoy Life semi-sweet morsels (you can use cacao nibs instead for no refined sugar)
Instructions
Preheat oven to 350.
Make flax egg and set aside to thicken.
In a mixing bowl, combine mash bananas and remaining ingredients (except chocolate chips). Add flax egg.
Fold in chocolate chips.
Spread batter into a parchment lined 9x9 dish.
Bake for 30-45 minutes (I like firm edges so I cook mine for 45 minutes).
Allow to completely cool before cutting.
I cut mine into 36 squares. Each one is 2sp.
