Vegan mug cake
Having a sugar craving but don’t want just a handful of chocolate chips or cereal that you have lying around your pantry? Whip up this vegan mug cake in just a couple minutes! You can add cacao or cocoa powder for a super chocolatey cake! I threw a handful of chocolate chips in the vanilla cake batter for a chocolate chip cake. It was perfect.
Ingredients
1 tablespoon vegetable oil (you can also use coconut oil or avocado oil)
2 tablespoons water
1/4 teaspoon vanilla extract
2 teaspoons finely ground flaxseed
1/8 teaspoon pink salt
2 tablespoons white sugar
4 tablespoons unbleached all-purpose flour
1/8 teaspoon baking soda
1/4 cup vegan chocolate chips (optional: 1 tablespoon cocoa or cacao powder or chocolate chunks)
Instructions
Mix all ingredients together in a regular sized mug.
Microwave for 90 seconds.
Enjoy with a fork and a glass of plant based milk!
